 - 1 lemon, zested

 - 1 Tablespoon chiffonade mint (stack leaves, roll, slice thinly)
 - 1/2 garlic clove, grated
 - 1/2 - 1 teaspoon fresh cracked black pepper (to taste, if not fresh start with less)
