Breakfast, Dessert, and SnackCoconut Pineapple Baked Oatmeal

INGREDIENTS:
- 2 cups gluten-free oatmeal
- ¼ cup ALOHA vanilla protein
- ½ cup coconut sugar
- ½ teaspoon baking powder
- Pinch of sea salt
- ⅓ cup Kite Hill unsweetened almond yogurt
- ¾ cup almond or coconut milk
- 2 flax or chia eggs (2 tablespoon ground flax or chia + 6 tablespoon water)
- 1 cup crushed pineapple with juice
- ½ cup coconut flakes
- 2 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees.
- Combine oatmeal, protein powder, coconut sugar, baking powder, and sea salt in a large bowl.
- Add in yogurt, milk, chia or flax eggs, melted coconut oil, and vanilla, and combine well.
- Toss in pineapple and coconut and mix.
- Pour mixture into a baking dish and bake for 35-40 minutes.
