Drain, reserving 3/4 cup of pasta water.Put pasta back into pot over low heat. Add sauce and spinach, stir until spinach cooks down slightly. Add olives and ricotta. Stir to combine, adding 1/4 - 3/4 cup pasta water until desired consistency is reached (we used about 1/3 cup).Taste and adjust seasoning, adding salt, red pepper flakes, garlic and onion powder depending on sauce.
