Ellie Teale's Dinner Bowl

Instructions

  1. In a bowl, combine Kite Hill Greek yogurt, lime zest and juice, cumin and garlic powder, mix well, then mix in beans, corn, jalapeño, coleslaw, and cilantro​
  2. Season sweet potatoes with olive oil and seasonings, and bake at 425° until crispy​ (about 25 minutes)
  3. While the sweet potatoes roast, brown and mince protein of choice, then add in taco seasoning and Kite Hill queso and mix well​
  4. Assemble and top with cilantro​
  5. Enjoy!
