Savory Parfait with Roasted Chickpeas and Tomatoes

Parfait, but make it savory. This high-protein, high-fiber recipe is just one more way to enjoy yogurt all day long.

 

While this recipe is for four(ish) servings, if you're not planning to eat them all at once then we suggest you cook the entire can of chickpeas and refrigerate those, then assemble the parfaits with freshly dolloped yogurt and freshly cut tomatoes. Assembled parfaits keep for about a day in the refrigerator.

Instructions

  1. Turn stove to medium-high heat. Add a generous pour of olive oil to a heavy skillet, then add chickpeas. Sautee for 2 minutes, then add cumin, garlic powder, salt, pepper, and continue sautéing until chickpeas are crispy, about 10 more minutes. Transfer to a bowl to cool.
  2. While chickpeas cool, slice tomatoes into halves or quarters depending on size. Sprinkle with salt and pepper.
  3. Assemble parfaits. Divide yogurt into bowls or jars (we recommend four servings for a hearty snack).
  4. Divide sliced tomatoes among parfaits.
  5. Divide chickpeas among parfaits.
  6. Top with a dash of balsamic vinegar if desired.
